It embodies the soul of French gastronomy: integrity, terroir, and a deep respect for the artisans behind each bottle. For us at Bonhams, it is an immense honor to bring such a legendary Michelin-starred cellar to the international stage in a series of auctions across three of our major locations. This series not only celebrates the extraordinary wines that defined Hostellerie Jérôme but also pays tribute to the enduring dialogue between great cuisine and great wine that lies at the heart of French culture."
Chef Bruno Cirino comments, "It is a chapter that comes to an end. Collaborating with Bonhams for the sale of this cellar is an exciting adventure that will bring our wines to all corners of the world. These sales will also be a way to share my passion, our story, and our know-how with connoisseurs who value authenticity and quality. I would also like to acknowledge the important role of Marion Cirino who has spent several decades exploring the greatest French vineyards to conceive this legendary cellar."
A Legacy of Culinary Excellence
Bruno Cirino, one of the most revered chefs in the culinary world, has built his legacy on an unwavering pursuit of the finest local ingredients and a mastery of blending flavours to bring out the very best of the region. Trained under culinary icons Jo Rostang, Roger Vergé, Jacques Maximin, and Alain Ducasse, Cirino honed his craft in some of France's most prestigious kitchens, including the Royal Monceau, the Negresco, the Juana and the Château Eza.
Following the success of his two Michelin-starred Hostellerie Jérôme, Cirino launched Racines in Nice in February 2020. Every day, he handpicks the freshest seasonal produce from local producers, along with vegetables grown in his own gardens located in Eze Village, creating dishes that celebrates the vibrant flavours and culinary traditions of southern France and the Mediterranean. In 2021, just a year after its opening, Racines earned a Michelin star for its inventive cuisine and culinary excellence, and has retained it ever since.
